How do you even start planning a delivery-style mobile app?

I’ve been sketching an idea for a mobile app that works kind of like a delivery service, but the more I try to structure it, the more it feels like I’m missing something crucial. There are so many different parts — user registration, tracking, payments, courier flow, timings — and I can’t figure out what should be the foundation. I don’t want to jump straight into coding without understanding how the whole system should function. Has anyone been in that early planning stage and found a good way to make sense of it all?

So far I’ve been trying to map the screens and list out features, but everything still feels scattered. A few people suggested using templates or ready-made systems, but I’m unsure if that’s flexible enough, especially if the project grows. I’d really like to hear how others approached the first steps — not the coding itself, but the thinking part before the actual build
